How Does the Oven to Air Fryer Conversion Work?
An air fryer isn't actually a fryer—it is a hyper-concentrated convection oven. A high-output heating element paired with an aggressive overhead fan forces superheated air directly onto the surface of your food in a compact 4 to 8-quart chamber.
Because moisture evaporates up to 3x faster than in a massive, drafty standard oven, two golden conversion rules apply to virtually every recipe:
Rule 1: Lower Temp by 25°F (15°C)
The intense focused airflow will scorch breading, sugars, and delicate marinades before the interior is heated through if you cook at full oven temperature.
Rule 2: Cut Time by 20% to 25%
With zero dead air space and rapid surface conduction, food cooks in about 75% to 80% of standard baking time. Always check early.

- Never crowd the basket: Air needs 360-degree circulation. If food is stacked or touching, it steams rather than fries. Cook in batches if necessary.
- Ditch non-stick aerosol sprays: Aerosol propellants contain soy lecithin and chemicals that permanently gum up and strip non-stick coatings. Use an oil mister filled with avocado or olive oil.
